We are nearly half way through the summer holidays and if you are like most of us here at Fine Scottish Hampers, everyday has been a excuse to indulge in an ice cream, or two. But with only so many different flavours to try, there comes a point where only an extra special dessert will do, whether you are celebrating a special occasion or simply enjoying a family barbecue.
Luckily we have created two brilliant Scottish summer desserts that are not only super delicious, but can also be made in a flash. So put down the ice cream scoop and try a summer dessert recipe that will really please your taste buds.
Scottish Cranachan
A classic summer dessert recipe comprised of toasted oatmeal, raspberries and lashings of cream, this treat is the perfect finishing touch to any garden party.To make, simply scatter a thin layer of proper Scottish oatmeal over a baking tray and bake in the oven until just golden brown. This helps unleash oatmeal's unique nutty flavour that adds a new depth to this summer dessert. To make the raspberry sauce, place a handful of raspberries into blender and pass through a sieve to create a smooth purée. Sweeten with a little caster sugar to remove the tartness and leave to one side. In a separate bowl, whisk your double cream with Struan Apiaries Blossom Honey and a few drops of Lagavulin Whisky, (add a few more dashes of whisky if you prefer your Cranachan with a kick). Stir your oatmeal into the cream and place in glass serving dishes, alternating each layer with cream, raspberries and sauce. A dessert made for summer.
Bread and Butter Pudding With Scottish Tablet
Even in the summertime, there are moments when only a pudding will do. This brilliant summer dessert recipe is super easy and wonderfully indulgent enjoyed after a barbecue.To make this wonderful Scottish treat simply combine a dash of whisky, milk, butter, eggs, sugar, vanilla and slightly stale bread in a bowl and pour into a baking dish. Cover with brown sugar and bake in the oven for approximately 1 hour until set. For that perfect Scottish twist serve with pieces of Scottish Tablet and dollop of cream. Simply delicious.
